Lemon Berry Cookies

A quick and easy recipe that is colorful and fun! A great easy recipe to get kids involved in! It requires little ingredients, and very little time.

Ingredients
  

  • 1 box Lemon Cake Mix
  • 2 eggs
  • 6 tbsp Butter melted
  • 10 Lifesavers Cherry/Rasberry flavor

Method
 

  1. Preheat oven to 350 degrees.
  2. Unwrap the 10 lifesavers and place in a ziploc bag. Use a rolling pin or something hard to crush the lifesavers to small pieces.
  3. In a mixer, mix the box of lemon cake mix, 2 eggs, and melted butter. Mix on low speed for 2 minutes untill batter is a thick consistency.
  4. Add crushed lifesavers to mix and continue to mix for 1 minute.
  5. Use an ice cream scooper to scoop out balls of dough onto ungreased cookie sheet. Bake for 14 Minutes at 350 degrees.
  6. Remove from oven and allow to cool. Enjoy!

Notes

The dough will be a tad sticky. This is expected! If you would like to hand roll your dough into balls, roll balls into sugar beforehand to help with stickiness.
